Obviously, the longer a contaminant rests on the surface of the stainless steel, the more likely it is to work through the chromium oxide layer. Regular cleaning with water or a stainless steel cleaner also helps to remove the contaminants, and in the case of a ss cleaner, protect the surface of the item.
